 Mutton biryani is a delightful and aromatic rice dish that is widely enjoyed across many regions of the world, particularly in the Indian subcontinent. This savory dish involves cooking marinated mutton pieces with a blend of fragrant spices, and then layering them with rice to create a mouth-watering and satisfying meal. Ingredients:

1 kg mutton (bone-in or boneless)

4 cups basmati rice

4 onions, sliced thinly

2 tomatoes, chopped

1 cup yogurt

1 cup fried onions

2 tbsp ginger-garlic paste

2 tbsp biryani masala

1 tsp turmeric powder

1 tsp red chili powder

1 tsp cumin powder

1 tsp coriander powder

1 tsp garam masala powder

Salt to taste

1/2 cup oil or ghee

4 cups water

A few saffron strands (optional)

1/2 cup milk (optional)


Instructions for Mutton Biryani:

Clean the mutton pieces and marinate them with yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala powder, and salt. Mix well and refrigerate for at least 2 hours or overnight.

Wash the rice in cold water and soak it for 30 minutes. In a large pot, bring 8 cups of water to a boil and add the soaked rice. Cook for 5-7 minutes or until the rice is half-cooked. Drain the water and keep the rice aside.

Heat oil or ghee in a large pot or a pressure cooker. Add the sliced onions and saute until golden brown. Add the chopped tomatoes and cook until they are soft and mushy.

Add the marinated mutton pieces and cook for 10-15 minutes or until the mutton is browned on all sides. Add 2 cups of water and pressure cook for 20-25 minutes or until the mutton is tender.

Take out the cooked mutton from the pot and set it aside. In the same pot, layer half of the half-cooked rice over the mutton pieces. Sprinkle some fried onions and saffron strands on top of the rice.

Layer the remaining half of the rice over the first layer of rice. Pour the milk over the rice and sprinkle some more fried onions and saffron strands on top.

Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes or until the rice is fully cooked and fluffy. You can also bake the biryani in the oven at 350°F for 20-25 minutes.

Remove the biryani from the heat and let it rest for 10-15 minutes after cooking it. This allows the flavors to blend and the rice to absorb the spices and aromas.

Serve the mutton biryani hot with raita, salad, or any other side dish of your choice.
