Instructions:

Preheat oven to 350°F.

In a large Dutch oven, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside.

In the same Dutch oven, add olive oil and brown beef on all sides. Remove beef and set aside.

In the same Dutch oven, sauté onions and garlic until onions are translucent.

Add wine, beef broth, tomato paste, flour, bay leaves, and thyme. Bring to a boil.

Add beef and bacon back to the Dutch oven. Cover and bake in the oven for 2-3 hours, or until beef is tender.

In a separate pan, sauté mushrooms until browned. Add to the beef mixture and bake for an additional 15 minutes.
